I know I am a little late in posting this, but I thought I might as well share it anyways. I love making peppermint bark right before christmas to give as gifts and to enjoy. They are so easy to make, delicious and pretty! This year, I decided to expand my options a bit and make different kinds of chocolate to give as gifts.
Peppermint bark:
All you need is some baking chocolate (semi sweet, sweet or dark) and white chocolate and candy canes. I usually get a bit more semi sweet chocolate than white--1.5:1 ratio?
1. melt the chocolate (non-white) -- be careful not to burn the chocolate. I usually put it in a bowl and microwave at 50% power for 10 to 30 seconds, take it out, stir, and if not completely melted, microwave again for a shorter amount of time at 50% power. you know that you burned the chocolate if it becomes chunky and hard to mix.
2. get some parchment paper and pour the melted chocolate onto the sheet. I usually don't worry about the shape, but I try to make it thick enough.. maybe half a nail depth? hahaha
3. let it sit and harden. While you are waiting, put 5-6 candy canes in a ziploc bag and start crushing with meat tenderizer or hammer.. or any weapon of choice.
4. when the chocolate has hardened, melt the white chocolate and do the same thing as 1, and pour the melted white chocolate onto the dark chocolate.
5. Right after you pour the white chocolate, sprinkle the crushed candy cane generously onto the chocolate. Let it sit and harden.
6. Cut it into pieces and enjoy!
Dried cherries & walnuts in chocolate:
This one is just a random creation of mine. I found some dried cherries from target and had walnuts at home, so voila!
1. melt the semi sweet chocolate and pour it onto the parchment sheet.
2. Before it hardens, sprinkle chopped cherries and walnut onto the chocolate.
3. let it harden.
4. Pour another layer of melted semi sweet chocolate to cover the cherries and walnut.
5. Let it harden and cut and enjoy!
This is how I packaged the chocolate. I got some boxes from Michaels and bought some tissue papers and folded it to fit the box.
This looked a bit empty, so I ended up adding some cereal chocolate (too easy to even mention.. I just coated some rice cereal with melted chocolate..)
