Recipe of the week! - Roasted Curry Cauliflower


Hey guys,

I'm going to start uploading recipes that I've tried and want to share! It is going to be very unprofessional and loosely done. lol so bear with me.

Recently, I had to bring a dish to a potluck at work. I wanted to cook something that would be okay to eat hot or cold since I wasn't sure if I would be able to heat it up. Also, something that would look fine in a plastic  container was preferred. 

For my anniversary with the boy, we went to Hatfields, a restaurant in LA that was quite amazing but rather pricey. One of the dishes that came out was curried cauliflower. I really really liked it and wanted to make something like that.

So all you need are:
1 or 2 bundles(?) of cauliflower - cut into pieces like in the pic above
curry powder - enough to cover most of the cauliflower pieces - more the better I found out. 
garlic salt - to taste
and any kind of spices of preference - I had Costco's non salted spices that I just generously sprinkled. Fennel seeds, oregano, rosemary, etc could all be delicious!
any kind of oil - enough to be spread all over the cookie sheet
sliced almonds - just enough. you can skip this if you don't like nuts or are allergic.

Preheat oven to 400 F. Oil the pan. just basically combine all the ingredients together on the pan to avoid washing additional dishes. and pop the pan in the oven and cook for 30 minutes or until the cauliflower looks roasted, NOT BLACKENED. 

and you are DONE!
